簡介
納豆,是維持日本人健康長壽的秘訣之ㄧ。納豆是將煮熟黃豆直接加入一種特殊的發酵納豆菌 (Bacillus subtilis natto ) 所製成帶有黏性物質與獨特氣味的黃豆發酵食品。1986年,日本富崎醫科大學的教授即發現納豆中含有天然的血栓溶解酵素,並命名為納豆菌酵素,也就是納豆激酶Nattokinase,因此,日本人認為常吃納豆對引起血管心肌梗塞的血栓有引力的溶解作用。近幾年來納豆激酶在美國地區也是越來越普遍的營養補充品,主要的訴求在於高血壓與其他心血管疾病的預防與保健。
納豆激酶是納豆菌發酵後所產生的蛋白酶,顧名思義稱納豆激酶。納豆激酶中含有的天然血栓溶解酵素,是一種分解纖維蛋白的酵素。主要在於溶解血液凝塊,可以大大降低由血液中纖維蛋白原所引起的血栓性疾病發生率
